Creamy Potato Soup with Sriracha

Nothing boring about this potato soup, I can tell you that much! First, it will not be white when served, the color will be reddish. Also, the taste of course, will be different than a usual cream of potato soup. You could very well use the sweet potatoes instead of the white potatoes.

Servings: 4

Preparation time: 45 minutes

Ingredients:

• 5-6 large white potatoes (washed and peeled)

• 3 tbsp. sriracha sauce

• 2 cups vegetables broth

• 3 cups whole milk

• 1 cup sour cream

• 1 chopped leek

• 1 small chopped yellow onion

• 1 Tbsp. minced garlic

• 1 Tbsp. unsalted butter

• Salt, pepper

• Pinch cumin

Method:

In a large saucepan, boil water and salt.

Peel and cook the potatoes until done.

In a different saucepan, you can start heating the butter and cooking the garlic, leek and onion for 10 minutes.

Add the broth and the sriracha sauce and stir.

Gradually add the cream and the milk and continue stirring.

Add half of this mixture into the blender container and half of the cooked potatoes.

Activate the blender until you obtain a smooth texture.

Pour back this portion in the saucepan.

Add the rest of the ingredients and activate again until the texture is perfect.

Add the second portion t the first one.

Mix gain and let it simmer until rad to serve.

Drizzle a little sriracha sauce to decorate when serving, perhaps some fresh since parsley as well.
